Grow your own Yacon!

Yacon is easy to grow, just protect from frosts. It is best planted around October and harvested around June. The edible tubers grow separtely to the crowns, so the crowns can be stored away over Winter and replanted the following season.

Yacon (Smallanthus sonchifolius) is classified under the Asteraceae family, which includes chicory (Cichorium intybus), Jerusalem artichoke (Helianthus tuberosus), and dahlia (Dahliasp). Yacon can grow to a height of 1.5-2.5 m with heart shaped leaves that can reach a length of up to 30 cm. Yacon also has a small yellow flowers that appear towards the end of the growing season. The Yacon roots vary in shape, size and weights with some as heavy as around 3kgs!

The tubers are crunchy, juicy and sweet. After peeling, they can be eaten raw (especially good in fruit salads) or cooked. When used raw, lemon juice can be added to prevent browning. For recipes and ideas go to our recipes page.
